Molasses Sugar Cookies

¾ cup shortening
1 cup sugar
¼ Grandma’s molasses (gold label)
1 egg
2 tsp baking soda
2 cups flour
½ tsp cloves
½ tsp ginger
1 tsp cinnamon
½ tsp salt
Melt shortening in pan, remove & let cool. Add sugar, molasses & egg. Beat well. Sift together flour, soda, cloves, ginger, cinnamon & salt. Add to 1st mixture, mix well, chill. From 1 inch balls, roll in sugar and place on greased cook sheet, 2 inches apart. Bake at 350 degrees for 8 to 10 mintues.
Pine Bark

Preheat oven to 400 degrees.
Saltine or other soda crackers
2 sticks of butter
1 cup brown sugar
1 12 oz bag chocolate chips
Line a deep cookie sheet with non stick foil. Place a layer of saltines on foil. In a saucepan melt two sticks of butter and 1 cup of brown sugar. Bring to a boil for 3 minutes. Pour mixture over saltines and spread to the edges. Put the cookie sheet in the oven for 7 minutes (Hot sugar will bubble over if cookie sheet isn’t deep enough!) Remove and sprinkle with chocolate chips. After the chocolate chips start looking wet, remove the pan from the oven and spread the chocolate chips around over the top. Cool and cut into squares.
Forgotten Cookies

Makes 2-3 dozen
Important: Preheat oven to 350 degrees
Beat until stiff:
2 Egg Whites
a pinch of salt
2/3 c. sugar
Fold in:
1 C. Chopped Pecans
1 t. vanilla
1 C. Chocolate Chips
Drop mixture by spoonfuls onto ungreased foil. After the oven has preheated to 350 degrees, put the foil directly on the oven rack (not on a cookie sheet) and turn the oven off. Leave the cookies in the oven for at least 8 hours (overnight is good- don’t open the oven door). Remove cookies from foil and store in an airtight container.
